Quick and economical, this pickle is fresh, tangy, flavoursome and most importantly, absolutely simple and easy. There are two things you need to take care of. First, use carrots which are fresh, firm and do not have blotches on them. Second, use only mustard oil for this pickle because you won't get the excellent pungent taste with any other oil.

The pickle will be of a lovely bright red colour. You can serve it with rotis or parathas. You can eat this fresh or refrigerate it. Once refrigerated, this pickle would last fine for about 4 days. Happy eating!
