Rajasthani Red Mutton Curry

This authentic Rajasthani delicacy is fiery, delicious and absolutely out of the world! You can make the curry as hot as you want. The store-bought Kashmiri chili powder lends a mild taste but a beautiful color. So the dish will be less hot. If you use powdered whole dried Kashmiri chillies, the curry will be spicy hot and bring get the beautiful red color too!

Ingredients

  • 3 tbsp mustard oil
  • 4 cloves
  • 1 black cardamom
  • 1 bay leaf
  • 1 cup sliced onion
  • 1 kg mutton - cut into 1? pieces
  • 2 garlic cloves, minced
  • 1? ginger, minced
  • 10-12 whole dry Kashmiri chillies
  • 1/2 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/2 cup thick curd/plain yogurt
  • 1/2 cup water
  • Salt - to taste
  • 1.5 tbsp ghee
  • 2 garlic cloves, grated
  • Coriander - to garnish

Preparation

  • In a heavy bottomed pot, heat mustard oil till it smokes.
  • Turn off the heat immediately.
  • Wait for about a minute. Turn on the heat and add the cloves, black cardamom and bay leaf. Wait till they crackle.
  • Add sliced onion and fry till they turn brown.
  • Then add the mutton pieces, Kashmiri chili, red chili and turmeric powder. Sauté for about 20 minutes till the sides of mutton become brown.
  • Add the minced ginger and garlic and sauté for another 5-8 minutes.
  • Reduce the heat to low and sauté for 2 more minutes. Then add the yogurt.
  • Add salt and stir around so that the yogurt combines with spices and coats the mutton pieces. Sauté uncovered for another 2 minutes.
  • Add the water, ghee and grated garlic to the pot next and increase the flame to medium.
  • Cover the pot and cook for about 40 minutes till the mutton is done.
  • Let the curry rest for about 3-4 hours before serving.
  • Garnish with fresh coriander.
  • Serve hot with roti or steamed rice.

Do not shun this dish because it uses a lot of chillies. Prepare it according to your taste buds. Even at moderate heat, this dish will taste amazingly delicious!
